You didn't mention how long you'll have to spend, but I tend to agree with David on Alaska. That's where my wife and I are going for our 40th Anniversary later this year. Well, truth be told, we'll actually be spending our 40th in Monument Valley at the end of this month, but I thought Alaska in January would be a bit too cold for us Desert Rats.

If you have time, a leisurely trip through British Columbia from Vancouver to Calgary would be nice. Lots of Canadian National & Provincial Parks to visit with some absolutely stunning scenery and tons of wildlife.
